Freeze em! While an overabundance may seem to be a nuisance at the time, it is a luxury when the winter wind is howling outside. I dont even slice them. A quick rinse and into a freezer bag. We eat a lot of pepper steak and stirfry. You simply remove from the bag what you need and place them in a bowl of water for a few minutes. Dice them for chili or shoestring them for pepper steak. You cant make good gumbo without peppers. My alltime favorite use is in making BBQ pork burgers. Mix coarse ground pork with diced peppers and onions and garlic. Let sit in the fridge for a couple hours. On a foil covered cookie sheet form into patties. Bake at 325 for half an hour, drain apply BBQ sauce and bake for another half hour. Call the boys and stand back!
