Pickled Peppers

In order to experiment with growing hot peppers, I decided to plant about 6 plants and observe the results. To my surprise, the yield was just amazing!

I'm not sure what kind of hot (more like "mild") pepper I planted (bright yellow in color), but I decided to slice them open, clean them up and put them in a sealed jar with a home made marinade.

I pretty much invented the marinade also, using herbs from my garden, balsamic vinegar, a bit of honey, water, etc, etc. I don't remember the exact recipe since it was all improvised to taste.

I ended up with 4 or 5 peppers per jar and did about 8 jars. I'm still enjoying them a year and a half later.
