For Dinner and As A Snack

by Dana J. Leason
(Arkansas)

Cut up a jalapeno or 2 and season your olive oil. After a couple minutes, remove them from the oil. Slice several banana peppers about 1/8" thick. Slice fresh okra about 1/4" thick. In a bowl mix 1/4 cup corn flour, 1/4 cup whole wheat flour, 1 bottle of McCormick garlic herb spice and a very large bottle of Parmesean cheese. In a seperate bowl crack 3 eggs, beat with a fork add a teaspoon of milk beat again. Add the sliced okra and peppers to the egg mix and coat completely then; a few at a time place them in the dry mix bowl shake to coat. Drop a single layer into hot olive oil and fry until lightly brown ( a couple of minutes). Drain on paper towels. sprinkle Tone's on it and eat. Delicious! Also:
Slice peppers as above. Fill a plate with round bite-size tortilla chips. cover with a single layer of peppers and smother with medium cheddar shredded. Microwave for 1 1/2 minutes. eat
