Banana peppers can be used so many ways

We love to stuff them. Cut the top off and set aside. Clean the seeds and veins out with a spoon (safer way or a knife. Stuff with FRESH ground meat (never defrost then refreeze any meat) if you plan on freezing the extras for a later date. Put tops back on to keep in the juices while cooking. You can defrost the ground meat if eating right away. Prep your meat the way you like it. We usually use our meatloaf style and it is awesome. We make our own sauce from our garden tomatoes and chop up our own green bell peppers (which we also stuff the same way). Depending on how much time you have to cook them, we bake and we also stand them bunched together in a slow cooker which works real well especially on hot days when you don't want to run the oven. Another way we enjoy these peppers is to place them right on the grill grate, let them ever so slightly start to brown and just bite and pull by the stem and the seeds stay attached in a bunch and you enjoy only the pepper (yummy). Most of all have fun with your cooking and don't be afraid to experiment with your methods.
