Baked Veggies

I found a recipe for baked vegetables...cut potatoes, carrots, onion, parsnips, --all cut into bite- sized pieces. I added Jerusalem Artichokes last year, not even peeled; I only washed them well and quartered them. In a large bowl combine the veggies with olive oil, salt, pepper and minced garlic or other herbs for seasoning. Stir well, coating all the veggies. Spread onto a baking sheet and bake at 400 degrees for about 10 minutes or until tender and roasted. I stab a knife to test for doneness. The flavor of the Jerusalem Artichokes is fantastic.

I simply incorporated this veggie into an existing recipe. I noticed that no mention was made about baking this "sunchoke" and felt I should mention that they are delicious baked.
